How to make Pav Bhaji |Indian Chat | Keep it simple

Home made Pav Bhaji
Before making this amazing chat, one needs to be well prepared. I am breaking down the recipe into multiple smaller steps that one need to follow. Let’s start with the ingredients.Ingredients
- Vegetables – Potato (1), Tomato (2-3), Onion (2-3), Capscicum (1), Cauliflower (100g), Beetroot (1/2), Peas (100g)
- Jeera
- Pav Bhaji Masala powder – 2 tsp
- Lemon – 1 pc
- Coriander – 50 gms
- Chillies – 1 pc
- Ginger Garlic Paste
- Salt
- Vegetable oil – 10ml
- Butter – 100g
- Pav Bun
Equipments
- Kadai
- Cooker
- Masher
- Spatula
Cooking Instructions
Step 1 – Cooking vegetables- Take small cooker and add 10ml of oil
- Add 1 tbsp of Jeera and heat until it breaks up
- Add chopped Potato, Cauliflower, Tomato & Beetroot (4-5 small pieces)
- Add salt and green chilly into mixture
- Cook the mixture for 1-2 mts. If you are adding fresh peas, it can be added so it can cook along with other vegetables
- Add around 50-100ml water
- Cover the cooker and wait for 3 whistles of cooker
- Take kadai and add 1-2 tbsp butter & keep it low flame so it does not burn
- Add finely grated onions & heat until onion turns slightly golden brown. Intention is to let the onion become soft
- Add small pieces of capscicum and 1 tbsp of Garlic Ginger paste
- Cook for 2-3 mts in high flame so that both vegetables become soft
- Put the kadai on low flame
- Add 1 tsp of Red Chilli powder
- Add 2 tsp Pav Bhaji Masala
- Add 1 tsp Garlic paste
- Mix the ingredients while cooking for 2-3 mts
- You can 50ml water while cooking Capscicum & Onions
- Keep cooking in low flame for 1-2 mts
- Open cooker to check if all vegetables are well cooked
- Mash the veggies using masher
- Add the mashed vegetable mixture into the masala mixture prepared in Step 2
- Continue to cook the mixture for additional 5-6 mts
- Mash the mixture and continue to cook for 3-4 mts more
- If the mixture is too thick, add 50ml water and continue to cook for 1-2 mts
- Add fresh lemon squeeze & coriander
- Add 1 tbsp butter
- Cook for 1-2 mts
- Base of Pav Bhaji is ready
Serving options
Option 1 – With Paav Buns- Take a plain tawa & keep in low flame
- Add 1 tbsp of butter
- Add 1 tbsp of Pav Bhaji into tawa
- Add 1-2 small pieces of Coriander
- Mix all its on tawa
- Slice the Paav Bun and place on tawa
- After 30s, invert paav bun to let it soak the butter & spices
- Serve the Paav Bun with plenty of Pav Bhaji, Diced Onions & Lemon
- Add a dollop of butter & finely chopped coriander in Pav Bhaji to enhance the flavor
- Steps 1-5 remains same as before
- Place the bread pieces on the tawa
- After 30s, invert paav bun to let it soak the butter & spices
- Serve the Paav Bun with plenty of Pav Bhaji, Diced Onions & Lemon
- Add a dollop of butter & finely chopped coriander in Pav Bhaji to enhance the flavor
Important
- If your are using frozen peas, it need for not added while cooking vegetables as it needs very little compared to fresh ones.
- Avoid adding too much water as the Pav Bhaji can become too liquid
