How to make Pav Bhaji |Indian Chat | Keep it simple

There are plenty of chats that’s famous in India but none as famous as the Pav Bhaji.  It’s fun watching the local vendors making it with ease but it’s hard to replicate the same at home.  After multiple trial and errors, I came up with a recipe that has worked for us. Apart from eating with Pav Bun, we have started eating it with Toast breads.In this article I will be sharing my simple recipe that’s easy to follow.

Home made Pav Bhaji

Before making this amazing chat, one needs to be well prepared. I am breaking down the recipe into multiple smaller steps that one need to follow.  Let’s start with the ingredients.

Ingredients 

  • Vegetables – Potato (1), Tomato (2-3), Onion (2-3), Capscicum (1), Cauliflower (100g), Beetroot (1/2), Peas (100g)
  • Jeera
  • Pav Bhaji Masala powder – 2 tsp
  • Lemon – 1 pc
  • Coriander – 50 gms
  • Chillies – 1 pc
  • Ginger Garlic Paste 
  • Salt
  • Vegetable oil – 10ml
  • Butter – 100g
  • Pav Bun

Equipments 

  • Kadai
  • Cooker
  • Masher 
  • Spatula 

Cooking Instructions 

Step 1 – Cooking vegetables
  1. Take small cooker and add 10ml of oil
  2. Add 1 tbsp of Jeera and heat until it breaks up
  3. Add chopped Potato, Cauliflower, Tomato & Beetroot (4-5 small pieces)
  4. Add salt and green chilly into mixture 
  5. Cook the mixture for 1-2 mts. If you are adding fresh peas, it can be added so it can cook along with other vegetables 
  6. Add around 50-100ml water 
  7. Cover the cooker and wait for 3 whistles of cooker 
Step 2 – Making masala mixture 
  1. Take kadai and add 1-2 tbsp butter & keep it low flame so it does not burn 
  2. Add finely grated onions & heat until onion turns slightly golden brown. Intention is to let the onion become soft 
  3. Add small pieces of capscicum and 1 tbsp of Garlic Ginger paste
  4. Cook for 2-3 mts in high flame so that both vegetables become soft 
  5. Put the kadai on low flame 
  6. Add 1 tsp of Red Chilli powder 
  7. Add 2 tsp Pav Bhaji Masala
  8. Add 1 tsp Garlic paste
  9. Mix the ingredients while cooking for 2-3 mts 
  10. You can 50ml water while cooking Capscicum & Onions 
  11. Keep cooking in low flame for 1-2 mts
Step 3 – Mixing ingredients
  1. Open cooker to check if all vegetables are well cooked 
  2. Mash the veggies using masher 
  3. Add the mashed vegetable mixture into the masala mixture prepared in Step 2
  4. Continue to cook the mixture for additional 5-6 mts 
  5. Mash the mixture and continue to cook for 3-4 mts more 
  6. If the mixture is too thick, add 50ml water and continue to cook for 1-2 mts
Step 4 – Finishing Touches
  1. Add fresh lemon squeeze & coriander 
  2. Add 1 tbsp butter 
  3. Cook for 1-2 mts 
  4. Base of Pav Bhaji is ready 

Serving options

Option 1 – With Paav Buns
  1. Take a plain tawa & keep in low flame
  2. Add 1 tbsp of butter 
  3. Add 1 tbsp of Pav Bhaji into tawa
  4. Add 1-2 small pieces of Coriander 
  5. Mix all its on tawa
  6. Slice the Paav Bun and place on tawa 
  7. After 30s, invert paav bun to let it soak the butter & spices 
  8. Serve the Paav Bun with plenty of Pav Bhaji, Diced Onions & Lemon
  9. Add a dollop of butter & finely chopped coriander in Pav Bhaji to enhance the flavor 
Options 2 – With White/Brown Bread
  1. Steps 1-5 remains same as before
  2. Place the bread pieces on the tawa
  3. After 30s, invert paav bun to let it soak the butter & spices
  4. Serve the Paav Bun with plenty of Pav Bhaji, Diced Onions & Lemon
  5. Add a dollop of butter & finely chopped coriander in Pav Bhaji to enhance the flavor

Important 

  • If your are using frozen peas, it need for not added while cooking vegetables as it needs very little compared to fresh ones.
  • Avoid adding too much water as the Pav Bhaji can become too liquid

Final Thoughts 

It was great fun documenting recipe of my favorite Pav Bhaji.
